I will have to give this some thought (as to what my favorite is). And then find my mom's recipe. I'm not a baker, so I don't bake anymore, so virtual cookie exchange is right up my alley.

Mum's shortbread:
2 c flour
1c butter
1/2 c icing sugar
1/2 tsp vanilla
few grains salt
That's it. Make the usual way by beating butter and vanilla, add sugar, then flour and knead until cracks appear (don't overdo it), roll out the chilled dough and cutt in into rounds with cookie cutters or a smal glass. Prick the tops with a fork before baking on an ungreased sheet - 325 or so until they are slightly tan around the edges. About 10 mins. Check often.
or you can beat the dough until it's light with a mixer and drop by spoonfuls on a baking sheet.
Decorate with cherry bits, or add in some chopped walnuts and roll in fine sugar when done. and still warm.
These hit just the right note -- not too sweet. Great with a nice cuppa.

My mom made these
1 bag marshmallows
1 small carton whipped cream
coconut to roll in
In large bowl whip cream. Add marshmallows. Put in fridge and leave covered for overnight.
In morning, pluck out marshmallows one by one and roll in coconut. The bowl will be completely empty.
They keep in a container in fridge for short while but it is best to freeze and take out as needed.
Oh, so good!!!!!!!
